Cultured celery extract is a concentrate prepared from celery. The extracts come in powder or liquid and are commonly used as a food preservative in "natural" deli meats and organic bacon instead of sodium nitrite because celery extracts are "naturally derived nitrites". Regardless, cultured celery extracts are biochemically identical to sodium nitrite when added to deli meat.
Nitrites are found naturally in sea salt and in many vegetables like spinach, beets and celery. Ingesting small amounts of nitrites from eating vegetables is harmless. But celery extracts are created in a lab when the plant's juice is combined with bacterial cultures to create a concentrate that is much higher in nitrites.
This celery concentrate is then used as an alternative preservative because it extends shelf life and mimics the same effects as sodium nitrite, providing the classic pink colour and distinctive salty flavour of classic deli meats. Products that contain concentrated vegetable extracts can have as much or more nitrites than foods that list sodium nitrite on their label. As mentioned, nitrites are relatively inert when consumed from eating vegetables, but when nitrites are added to meat and then cooked, a chemical reaction can occur that creates nitrosamines, the cancer causing compounds. Here is a simplistic explanation: Nitrites + Meat (amino acids/protein) + Heat = Nitrosamines.

Celery extract contains high levels of plant protein, vitamins, trace elements and non-nutritional factors, and has biological and health benefits such as lowering blood lipids, improving immune function, and delaying aging.
Celery extract (the main active ingredient is apigenin) has a wide range of applications in multiple fields, as follows:
1. Medical and health care products
Anti-inflammatory and antioxidant: Apigenin has anti-inflammatory and antioxidant properties and can be used to develop therapeutic drugs for chronic inflammation-related diseases.
Uric acid reduction: As a natural flavonoid compound, apigenin is used as a raw material for uric acid reduction food, and works synergistically with ingredients such as green tea powder and curcumin.
Cardiovascular protection: It can regulate blood lipids, dilate blood vessels, assist in the treatment of hypertension and prevent arteriosclerosis.
Anti-cancer and cancer prevention: By inhibiting the activity of carcinogens and promoting detoxification, it reduces the risk of colon cancer and other diseases.
2. Food industry
Food additives: used in condiments, beverages, etc., containing volatile oils, apigenin and other ingredients.
Dietary supplements: added to solid beverages (5%), dairy products (5%), baked goods (3-5%), etc., and the recommended daily intake is adjusted according to the product type.
3. Cosmetics
Sunscreen protection: Apigenin has a strong ability to absorb UVB ultraviolet rays and is used in sunscreen and other protective products.
Anti-aging and moisturizing: Antioxidant ingredients can delay skin aging and improve dryness.
4. Agriculture and feed
Plant protection agents: Enhance crop resistance and reduce pests and diseases.
Animal feed: Improve livestock and poultry immunity and production performance.
5. Other health benefits
Sedative and sleep aid: Celery seed alkaloids can relieve anxiety and improve sleep quality.
Cooling blood and stopping bleeding: Shorten coagulation time, assist in the treatment of nose bleeding, menorrhagia, etc.
