-Hydroxytyrosol is a natural polyphenolic compound, mainly found in the fruit and leaves of olives, and is the most antioxidant of all the polyphenols of olive oil, and hydroxytyrosol is recognized as one of the best antioxidants. Hydroxytyrosol has a cate chol structure and is a typical antioxidant stress substance and free radical scavenger, which also gives it a variety of antitumor activities.
--Among the various phenols on the market, hydroxytyrosol is the only new information food ingredient authorized by the European Food Safety Authority as a fats and fats, and is recommended to be added to fish oil, vegetable oil and margarine. Hydroxytyrosol is mainly excreted in the form of hydroxytyrosol-3-sulfate, which is safe and non-genotoxic and mutagenic.
